Flour Tortillas
2 3/4 c flour
5 tbsp vegetable shortening
3/4 c warm water
3/4 tsp salt (dissolve in water)
mix, separate into 8 balls, roll
Fry
Banana Cake
1c sugar
1 egg
1/2 c butter
1 tsp vanilla
1 1/2 c flour
1 tsp baking soda
1c Mashed rverly ripe banana (3 bananas)
cream softened butter w/sugar + add egg and vanilla
mix together, mash ripe bananas and mix alternatively w/flour & baking soda.
For cake: bake 375 for 55min
For Cupcakes: bake 400 for 25 mins
Carrot Cake
2c sugar
3/4c oil
3/4c buttermilk
2tsp vanilla
3 eggs beaten
2c grated carrots
1/2c shredded coconut
3/4c rasins
1 can crushed pineapple (squeeze dry by hand)
Flour mixture: 2c flour, 2 tsp cinnamon, 2 tsp baking soda, 1/2tsp salt, pinch "all spice"
cream sugar and oil. Add buttermillk, vanilla & beaten eggs. Add flour mixture gradually. When blendded fold in carrots, rasins, coconut and pineapple.
Pour into greased tin.
Bake: 325f for 45-55 mins.
Pizza Dough
3c flour
1tsp salt
1/4c warm water
1 package dry yest (8 grams)
2 tbs olive oil
1 tbsp honey
3/4c water
Combine salt & flour. Dissolve yeast in warm water. sit for 10 mins. Add oil, honey, water and yeast mixture to flour. Knead for 5 mins.
Let rest in warm place cover for 1 hour.
Stretch dough & place on an oiled sheet.
Bake at 218c for 10 mins
Spinach meat lasagna
250g Ricotta cheese or cottage cheese
2c mozzarella
1 egg
250g chopped spinach
1 tsp salt
1 tbs oregano
1 tbs basil
3/4 tsp black pepper
1 litre sauce
ground beef, onions, garlic
lasagne noodles
boil noodles 15 mins
saute garlic & onions & cook mince meat.
mix ricotta, egg, spinach & herbs.
Add a little sauce to bottom of pan, then layer cooked noodles, layer of ricotta, mince meat, sprinkle mozzarella then top w/sauce, another layer of noodles etc...
repeat: sauce, noodles, ricotta, meat, mozzarella, sauce.
cover w/foil, bake for 90 mins at 175c till bubbling
Focaccia
4c flour
1/2c hot water
1 tsp active dry yeast
1c warm water
2 tsp salt
1 tbs olive oil
coarse salt
2 tsp fresh rosemary
parmesan cheese
Mix 1/2c flour, 1/2c warm water & yeast
Beat till smooth & cover w/plastic wrap.
stand overnight.
gradually stir in 1c warm water, 2 tsp salt & enough flour to make dough that pulls away from sides.
add rosemary, knead in enough flour to make stiff dough (smooth and elastic).
Place dough in lightly greased bowl. Turn once. Cover. Let rise in warm place (1hr)
Preheat oven 475f.
turn dough out onto well floured baking sheat.
make 1/2" deep indentations every 2" in dough.
Brush with olive oil
sprinkle with coarse salt & parmesan cheese.
bake for 15 mins or until golden.
